Tropical Baobab Smoothie

I recently took a break off my busy schedule and travelled to East-Africa, Kenya. ( i am now back) Where my passion for culinary arts sparked; However the last time I was there, I never was vegan, Nether did I even know what “Vegan” meant, however, I was curious on vegetarianism; Regardless this time around I made sure to get hold of this interesting organic produce, “the Baobab”

this unique superfood grows well in the Kenyan tropical regions due to the equator in Kenya. I spoke to the local farmers who cultivate this superfood. The locals prepare baobab differently and the final product is called “mabuyu” which in other words the baobab is broken, the seeds are removed and any excess fibre is gently removed. A pot is then placed on a medium heat, sugar, red food colouring, pinch salt, cayenne powder, and cardamom are added to the pot and once the mixture has combined and sugar as melted the baobab seeds are then added into the mixture frequently stirred until baobab has completely been coated.  And your left with the most delicious tangy, yet cardamon and the cayenne truly adds that kick for wanting more “mabuyu”.

This time around, I also found Baobab powder, and that caught my attention, I came to find out baobab is a superfood fruit packed with antioxidants. I decided to share with you all this baobab smoothie. Super simple, delicious and you can also get hold of this superfood powder at your local health store or easily order online.

Ingredients:

  • 3 tbsp baobab powder
  • 2 medium bananas, fresh (for a thicker texture freeze bananas)
  • 1/2 cup of plant-based milk, hemp ( or any plant based milk)
  • ice cubes, 3 cubes
  • blueberries, optional
  • raspberries, optional
  • pumpkin seeds
  • 1/2 fresh figs, optional

Directions:

In a high-speed blender, add the baobab powder, bananas, milk and ice cubes, blend until mixture is creamy, transfer into a bowl and garnish it with pumpkin seeds, blueberries, raspberries, fresh figs and make it all pretty to stimulate your eyes before treating your body with this delicious tropical smoothie. I promise you will not regret.
